Once again, thanks to Starbucks the new top trend in coffee has taken off all over the nation. From Seattle to D.C. specialty coffee companies have been showcasing their new toddy delights. Have you caught on to the cold-brew coffee craze?
Recent studies have shown that not only is cold-brew coffee a refreshing alternative to your already favorite hot-brewed coffee, but as well because of the slow, cold- steeped process it is a less acidic drink to give you your daily caffeine dose. So, what exactly is cold-brewed coffee? To put the obvious theory to rest, it is not just regular hot coffee poured over ice… the entire steeping process involves cold water and longer brew time allowing the coffee to gain an entirely different flavor and leaving a smoother outcome. According to consumerist.com, “As its name would indicate, the drink is made without heat, and is instead brewed slowly with coffee grounds that are steeped in cool water for 20 hours. Many consider cold-brewed coffees to be a smoother, less bitter drink than hot-brewed coffees, while packing a more caffeinated punch. All things that make sense because of that longer steeping time. Starbucks said previously, however, that its Cold Brew will only have a few more milligrams of caffeine per serving than its other cold coffees.”
Coffee as a compound has hydrophobic properties, that is why you see the grinds bubbling when hot water is added; but cold water does not dry up all the tannins therefore the bitterness somewhat disappears and leaves a stronger, more concentrated essence. Because it takes away some of the acidic elements, it is not as complex of a flavor as a regular cup of coffee. The acid and heat add the rich nuances, smells and lingering after-taste. Instead, our cold-brew is a gentler process of showcasing the flavors which provides a cleaner tasting cup of your already favorite drink.
Here at the Roastery, we have offered our cold-brew toddy for two summers now. It is quickly becoming one of our more popular menu options for the season because of its refreshing temperature and smooth, bold flavor. Our roasters use a mix of some Central American beans allowing for a spicy dark chocolate, molasses and nutty flavor profile. There are two different types of cold-brew coffee offered– ready-to-drink and concentrated, the latter of which is meant to be diluted with water or milk. Our signature cold-brew is called toddy because it is somewhere in-between the two types. It is a stronger cold-brew than most company’s ready-to-drink style; however it isn’t necessary to add milk or water.
The cold-brew process here is a double-filter process that takes approximately 18 hours. We use a coarser grind than a regular brew, and a greater amount of coffee to water ratio. We use 16 ounces of coffee to every 128 ounces of water. It is the same beans used for our regular roasted coffee, but because of the greater ratio and longer steep time it gives our customers a stronger cup of joe.
The Roastery’s cold-brew coffee is only offered in the summer season as of right now. Though we are always experimenting with different varieties and the idea of bottling our brew, it is currently just available at our café—ready to order. It is a stable enough coffee that can be kept in the fridge and heated up or drank over ice if you desire to save it for later.
